Farmstead cheese made with raw cow milk and ripened for 30 to 45 days. Its semi-soft paste is covered with an ochre orangey washed rind. Its lactic aroma is very delicate.
The Sparrow is a small, endangered pasture-breeding bird. The fromagerie decided to adapt their farming activities in order to let the sparrow breed in a safer calm and quiet environment.
